cheese and spinach rolls

I kind of winged it with these and they turned out great! I got the idea from miss Vicki Vegan but tweaked it a little.

ingredients
2 boxes frozen spinach (thawed & drained)
2 cloves garlic, minced
1 packet extra firm tofu
1/2 cup nutritional yeast
1 cup grated mozzarella cheezly
1 tbsp light miso paste
1 squeeze of fresh lemon
2 sheets pastry

method
1. Drain the tofu then put everything in a food processor and pulse about 5 times. You want to be blended but still chunky.

2. Roll in pastry and bake bake bake. TASTY! Perfect winter food, so yummy.

  1. These look amazing! I have a question that I should probably already know the answer to. What is the purpose of miso in dishes like this? Is it for the taste that it adds or what? I have never cooked with miso, so I was just wondering if I should buy some.

  2. hi Carissa, miso paste adds a nice salty tangy flavour, it kind of mimics parmesean... get a light coloured miso like white or mellow barley... you also dont have to use it... especially if youre not going to use it that much but I suggest getting amongst miso! you can make miso soup from the paste which is so delicious and healthy.

  8. or you can get it from any healthfood store... dont really know anywhere else to buy it (sometimes really big safeways have it)

  9. This is the only way I can make my hubby eat spinach! By clubbing it with cheese :) Baked stuff is even better :)
