spud bar - all over melbourne

I was doing theatre review one night in Richmond and called out to the twitterverse asking for suggestions on where eat on Swan St. The gorgeous Ceri from Healthy Party Girl suggested Spud Bar, it's one of her faves, she's a local and a vegan so I thought I couldn't go wrong. MIND BLOWING, choose from a baked spud OR a baked sweet potato (and apparently there is some kind of potato/roast pumpkin hack you can get if you ask sweetly). Pictured is the Moroccan Dahl Spud (sweet potato) with baby spinach, tabouli, beetroot and peas. SO.GOOD. It looked so massive but I put the whole thing away ravenously in 5 minutes. With many veganisable options I can't wait to go back!
