what vegans eat - monday

breakfast: 1 medium soy coffee and a gluten free berry/apple muffin - I often bake a big batch of muffins and freeze them. It's SO easy and helps me reduce the amount of wheat I eat. (how amazing is my garfield mug!)

lunch: red curry roasted pumpkin soup (I also roasted a knob of garlic and whizzed it up - combat all those gross winter germs yo!) + a couple of ryevitas

snack: handful of trail mix - seeds, nuts and sultanas
snack: 1 apple

dinner: purple peanuts - vegie onigri, rice salad + gome salad (beans, carrot and tahini dressing) $7.90

  1. So healthy! If I ate a tiny muffin for breakfast I would surely DIE of malnutrition by 10am. Sigh*

    1. I have a medium sized soy coffee, that fills me up and gives me a good dose of calcium and protein
